This is a typical work week lunch for my health fanatic husband. I have been prepping his meals for 9 months. He's starting to see some improvement around his waist. I normally cook one large meal and separated in individual Tupperware then freeze the rest so he can use during a week. Not only does it save us money by him not buying his lunch but it is very healthy and prepared with love. It is also very convenient because if I'm busy with the kids which I normally am, he can simply pull out a meal from the freezer and put it in his lunch box. I try different recipes each week- this week I baked chicken breast in onions, garlic and tomato sauce. Tomatoes are a great source of lycopene which help prevent male prostate cancer - I learned that from my health fanatic mom. And garlic is packed with antioxidants which help boost your immune system. I also included brown rice and broccoli as a side dish and for dessert, I cut up fresh pineapple, strawberries and blueberries. And for a quick mid-day snack boost, I packed a protein bar and a handful of almonds. Ever since I started dating my husband I knew he was serious about his health, nutrition, and fitness. I love being able to send him off to work with a home made, healthy meal to show him how much I appreciate all his hard work. :)
